Pepper Tree P.J.P. Cabernet Sauvignon is made in select vintages to represent the essence of Wrattonbully Cabernet. Only tiny quantities are produced.
The fruit is grown on Block 21A, the winery's finest Cabernet block. With thin, rocky, limestone soils it is an unforgiving patch of dirt, but it yields tiny bunches of tiny berries with fine, distinctive tannins.
The block undergoes individual row selection, which results in multiple harvests and multiple ferments. After fermentation, at sugar dryness, each ferment is separately pressed off skins to new and seasoned French oak barriques.
The wine spends 20 months in oak. The individual parcels are then tasted and those that emerge as outstanding are set aside for the final blend.
Deep dark red, Pepper Tree P.J.P. Cabernet Sauvignon is full bodied with brooding brambly fruit intensity, structured tannins and a long, spicy finish.
It is Pepper Tree's leading Cabernet. Cellaring potential is 10 years.
